good news for the cilantro

I know you are all dying to know how my cilantro has fared since its run in with the squirrels. And the answer is deliciously.

All those present at Thanksgiving 2009 might remember this little darling dish...

Marinated Butternut Squash

I wanted to make it yesterday, but I didn't have red wine vinegar, dried oregano, or fresh mint. So instead I used lime juice, chili powder/cumin, and cilantro. Poof! Mexi squash.
